Ben moved away from a full-time career in hospitality to create a better life/work balance and to be able to spend more time out of doors in his food van.
I’m a bit nostalgic. I wanted to focus on a food which reminded me of holidays I’d had in Switzerland when I was younger.
Rösti makes the perfect street food. I tested it on family and friends first, then worked out of a gazebo, and after enough positive feedback, got the van.
I love being in the van. I’m totally mobile, I can go all over the place. But it also gives me the chance to have a proper balance between work and family life. The kids show up a lot too – they have a particular fondness for the Parma ham I’ve got on board...Buy This Apron

The van’s top speed is 45mph. So there’s no chance of us getting a ticket.
People have trouble spelling rösti, but we’re not fussy!
